Behind the wine
Located in the north of the Hérault province, at the gateway to the Cevennes, the Domaine de Sauzet is one of the oldest wine-producing properties in the region. In an almost untouched nature, in the middle of oaks and garrigues, this magnificent castle dominated by its tower awaits you far from the bustle of the city. Its terroir, bathed by the sun’s rays, but paradoxically soaked by the rains, promises complex wines whose aromatic freshness has become the signature of the estate. It’s hard to imagine yourself 25 years ago, in a ruin with no future. For François Massol, the winemaker, it is a crush to which he gives his chance. If you meet Nicolas, the oenologist, he will undoubtedly describe to you with passion the various techniques of winemaking and the secrets of his soils. You may be lucky enough to discover a few kilometers further on, the young plot of vines planted on naturally resistant heart-shaped plants on an old paragliding runway. The sign of a work filled with patience and love.
